If you read our Clean Cuisine book, you know we do not advocate a “low-fat” diet. We do recommend a low-oil diet. Instead of getting your dietary fat from oil, we encourage you to get your fat from “whole food” sources such as nuts, seeds and avocados. The “whole” food is always going to be more nutritious and provide more health benefits than the oil. For this pesto you’ll get all of the rich and creamy goodness you’d get from the real deal, but with zero added oil. Use it just like you would conventional pesto. (It is amazing on spaghetti squash or on top of whole grain penne and peas.)
Ingredients
- Flesh from 1 whole avocado
- ¼ cup fresh lemon juice
- 2 cloves garlic
- ½ cup chopped fresh basil
- 3 tablespoons pine nuts
- Unrefined sea salt, to taste
- ¼ cup water
Directions
Place all ingredients in a Vitamix; process until smooth and creamy.
